April Highlights
In Montana, asparagus season begins as early as late April and can last until early July. While we are waiting for our early harvest, beautiful young asparagus is showing up in our local grocery stores, allowing us to enjoy a variety of recipes right now. In addition to being a delicious springtime treat, asparagus is a good source of vitamins K and C, folate (good for both heart and brain health), is high in antioxidants and prebiotic soluble fiber, and one cup of asparagus has only 27 calories.
