Egg Scramble with Hominy & Fresh Greens
- 2 Tb olive oil
- 3 green onions, sliced thin
- 1 15-oz can hominy, drained
- 2 cups chopped kale, any tough stems removed
- 4 eggs, beaten in a small bowl
- ½ cup jarred green chili salsa of your choice
- ½ cup grated Pepper Jack cheese
- Salt and pepper to taste
- 1 tsp red pepper flakes
Sauté the green onions in the olive oil over medium heat for two minutes. Add the hominy, stir to mix, and then add the kale. Sauté for a couple of minutes until the kale wilts but is still a brilliant green. Add the eggs and gently move them around without over stirring for a couple of minutes. As the eggs firm up, add the green salsa, the cheese, and the salt, pepper and pepper flakes. Gently stir to mix well until the cheese is nicely melty.
