In a bowl, combine the flour, baking powder, sugar, salt, and the cinnamon if using. Whisk to combine.
Oatmeal Pancakes
- 1 cup flour
- 1 Tb sugar
- 1 Tb baking powder
- ½ tsp salt
- ½ tsp cinnamon, optional
- 1 ¼ cup milk
- 2 eggs
- 1 Tb butter, melted
- ½ tsp vanilla
- 1 cup rolled oats
- Butter for cooking
- Optional: Add 1 cup diced banana to the batter for banana pancakes and top your finished cakes with sliced banana or any similarly added fruit (blueberries, apple, strawberries)
Mix the oats and the milk together and set aside for five to 10 minutes. Add the melted butter and vanilla to the oat mixture and stir to combine. Add the eggs and whisk the mixture again.
Add the dry ingredients to the wet and stir to combine.
Melt a tsp of butter in your frying pan over medium to medium-high heat and distribute the butter evenly to coat the pan. Drop the batter (about 3 Tb for each pancake) into the pan and cook for about three minutes until bubbles form on top and the bottoms are golden brown. Flip the pancakes and cook for another couple of minutes until they are golden brown on the other side. Set the finished pancakes aside in a warm oven to keep until ready to serve. Repeat until you’ve used all of the batter and made all of the pancakes.
Serve with a pat of butter, some syrup, and optional fruit on top.
