Spicy Salmon Bites

(Four servings)

1 lb salmon filets, cut into 1-inch cubes
1 Tb Tajin seasoning
1 Tb olive oil
Preheat oven to 400 degrees Fahrenheit.

Toss the salmon cubes in a bowl with the olive oil and Tajin seasoning until coated well. Arrange on your parchment or foil lined baking sheet and cook for about 10 minutes.

I like mine oven-roasted, but there are plenty of recipes out there for pan or air frying them.

Spicy Salmon Bites are a perfect ingredient for a hearty grain bowl with lots of veggies and a nice dressing.

For the sake of the photo, I used my salmon bites in a whole grain salad bowl consisting of:

1 cup chopped radicchio
1 cup cooked quinoa
½ avocado, sliced
1 radish, sliced
½ of a small carrot, grated
1 stalk celery, cut on the diagonal
1/3 cup shelled cooked edamame

I topped it with Green Goddess Dressing (recipe follows), which is nice balance for the spiciness of the salmon. You can throw together whatever salad ingredients you have on hand and use a salad dressing of your choice.

Green Goddess Dressing

1/2 cup plain yogurt
¼ cup mayonnaise
1 cup chopped parsley
1/2 cup other herbs: cilantro, dill, and/or tarragon
2 Tb chives
3 Tb lemon juice
zest of one lemon
1 garlic clove
2 tsp capers
salt and pepper
Combine all of the ingredients in a blender or food processor until smooth. Quick tip: if you blend/process the garlic first by itself, it will chop more finely and incorporate better.
