Avocado Toast with Sardines & Fresh Tomato
(serves 1)
- 1 slice of toast; I used a caraway rye
- ½ of an avocado, sliced
- Sardines: you can either layer two or three of them whole on top of the avocado, or as I’ve done in the photo, mash a couple of them first in a bowl with a tsp of mayonnaise and ½ a tsp of Dijon mustard, and then layer the resulting salad on top of the avocado
- 3 or 4 tomato slices
- Salt and pepper to taste
Layer the ingredients on the toast: avocado first, then sardines/sardine salad, tomatoes, salt and pepper.
