Chopped Green Salad with Turkey
Serves 4
For the salad:
- 4 C chopped salad greens
- ½ C dried cranberries
- 1 C cooked turkey, diced
- 1 cucumber, peeled and diced
- 1 red bell pepper, seeded and diced
- 1 C cooked black beans
- 1 C celery, diced
- I green apple, seeded and diced
- 3 green onions, thinly sliced
- ½ c sliced almonds (optional)
Orange vinaigrette:
- 1/3 C apple cider vinegar
- Juice of 1 orange
- 2/3 C olive oil
- 1 garlic clove, peeled and crushed
- Salt and pepper to taste
- 1 tsp cumin
- 2 tsp honey
- ½ C chopped cilantro (optional)
Mix the vinaigrette ingredients together. Makes about a cup and a half of dressing.
Combine all of the salad ingredients in a bowl. Toss with vinaigrette to taste and serve.
