Sautéed Cabbage

Serves 6 as a side

• 4 slices of bacon
• 1 small onion
• 4 cloves garlic, sliced
• 1 small head green cabbage, quartered, cored, sliced thin, and then chopped into 1 ½-inch pieces.
• salt and pepper

Cook the bacon over medium heat until it is crisp. Remove from the pan and drain on a paper towel.
Add the onion and garlic to the bacon grease in the pan and sauté over medium-high heat until they start to soften, about seven minutes. Add the cabbage and continue to sauté until it wilts but is still crisp-tender, about six minutes. Add salt and pepper to taste, toss in the crumbled bacon and serve.
