In a saucepan over medium heat, sauté the butter, brown sugar, apple and cinnamon, stirring occasionally, for about 10 minutes until the apples are soft and the sugar and butter have thickened into a light sauce. Toss the wheat in for the final two minutes of cooking. Let cool to room temperature.
Apple & Wheat Yogurt Parfait
(Serves 1)
- 1 cup yogurt of your choice; I used plain unsweetened
- 1 apple, seeded and diced small
- 1 tsp butter
- 2 Tb brown sugar or to taste
- ¼ tsp cinnamon
- ½ cup cooked wheat berries (instructions above)
- ¼ cup nuts of your choice; I used slivered almonds
- Optional additions to your yogurt: chia seeds, flax seeds, hemp seeds, protein powder
In a tall glass, layer the yogurt, apple mixture and nuts, and serve.
