- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 4 cups salad greens of your choice; I used dandelion greens
- ¼ cup thinly sliced red onion
Avocado Cherry Tomato Salad
(Serves 2)
For the salad dressing:
- ½ cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- ½ tsp red pepper flakes
- ½ tsp Dijon mustard
Whisk the salad dressing ingredients together.
Toss the salad ingredients together in a bowl and then toss with the salad dressing and serve.
