Chai Sugar Cookies

Preheat oven to 350F

Cream together:

  • 1 cup butter, softened
  • 1 ¼ cup sugar

Add and beat in:

  • 3 egg yolks
  • 1 tsp vanilla extract

In a separate bowl, mix together and then add to the butter mixture:

  • 2 ½ cups flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 ½ tsp cardamom
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp ginger

For each cookie, scoop about 1 tablespoon of the batter into a ball and then flatten slightly onto a parchment-lined cookie sheet, leaving enough space for them to spread out quite a bit while cooking. Bake for about 15 minutes, turning the sheet around about in the oven after the first seven minutes, until the cookies are just barely golden. Remove from oven and let rest for a minute before moving to a cooling rack.

Icing:

  • 1 cup powdered sugar
  • ½ tsp cinnamon
  • ¼ tsp cardamom
  • About 5 Tb water

Mix these all together until the icing is smooth and glossy. It should be thin.

  • Coarse sugar to sprinkle on top
