Slaw Dressing:
Chicken Apple Slaw
While we are in the dog days of summer, foods that require minimal kitchen time make for the most enjoyable meals right now. The recipe here for Chicken Apple Slaw can be made with leftover chilled roasted or rotisserie chicken, thus requiring no cooking, and the Herbed Bean & Couscous dish cooks in only 15 minutes and is delicious served at room temperature, so you can even make it ahead of time.
- 2 cups roasted chicken, diced
- 2 apples, cored and diced
- 2 stalks celery, diced
- 1 carrot, quartered lengthwise and then diced small
- 1 cup basil leaves, julienned
- 3 cups red cabbage, shredded
- ½ cup mayonnaise
- ½ tsp celery seed
- salt and pepper
- 1 Tb Dijon mustard
- ¼ cup olive oil
- 1/3 cup apple cider vinegar
Make the dressing and toss it with all of the slaw ingredients in a large bowl.
