- 4 cups assorted fruit, cut into bite-sized pieces. I used strawberries, bananas, orange slices, blueberries and raspberries.
Fruit Salad with Orange Poppyseed Dressing
For the dressing:
- ½ cup orange juice
- Juice of half a lemon
- Zest of 1 orange
- 3 Tb honey
- 1 Tb poppyseeds
In a bowl large enough to hold the fruit, whisk together the dressing ingredients. You’ll have to whisk for a couple of minutes to get the honey to melt completely. Adjust to taste (more honey, for instance, if you like your salad sweeter or if your fruit just needs an extra boost).
Toss with the cut fruit and let sit for about 10 minutes before serving.
