Green Bean Salad

(Serves 4 as a side dish)
  • 4 cups green beans, stems removed
  • ½ cup shredded Asiago cheese
  • ½ cup basil leaves, julienned

For the dressing:

  • ½ cup olive oil
  • ¼ cup lemon juice
  • Salt and pepper to taste
  • ½ tsp red pepper flakes
  • 2 Tb capers, finely chopped

In a medium pan, bring 4 cups of water to a boil. Add a dash of salt.

Cook the green beans in the water for about three minutes, until they are very green and just tender but still crisp. Drain and immerse in cold water to stop the cooking process. Drain and allow to dry.

In a medium bowl, whisk the salad dressing ingredients together. Add the cooked green beans, the Asiago, and the basil and toss to incorporate everything evenly. Enjoy!
