Ham & Egg Salad

  • 6 hard boiled eggs, peeled and chopped
  • 1 ½ cups cooked ham, diced small
  • 3 stalks celery, diced small
  • 2 green onions, thinly sliced

For the dressing:

Whisk together:

  • ½ cup mayonnaise
  • Juice of ½ a lemon
  • 1 Tb Dijon or brown mustard
  • ¼ cup sweet pickle relish
  • 1 tsp dried dill
  • Salt and pepper to taste

Toss all of the ingredients together with the dressing. This salad is great as a sandwich filling, on crackers, or just by itself on a bed of lettuce.
