Lemony Herbed Barley

(Serves 4-6 as a side dish)
  • 2 cups cooked barley
  • 2 cups chopped fresh parsley
  • 1 cup green onions, thinly sliced
  • Olive oil
  • Zest and juice of 1 lemon
  • Salt and pepper
  • optional: red pepper flakes

In a large skillet, sauté the green onions over medium-high heat until they are slightly browned and crispy. Add the barley and stir to distribute the green onions throughout. Add the lemon juice, zest, salt, pepper and the red pepper flakes if you are using them. Sauté for another minute to combine flavors. Remove from heat and add the parsley. Toss well to combine and serve.
