In a small frying pan, sauté the apples in the butter with the first 2 Tb brown sugar over medium heat for about seven minutes until they are softened.
Oatmeal with Apples
- 1 cup rolled oats
- 2 cups water
- Pinch salt
- 1 apple, skin left on, diced small
- 1 Tb butter
- 2 Tb brown sugar
- 3 Tb chia seeds
- 3 Tb flax seeds
- ¼ cup currants
- 2 more Tb brown sugar
- 1 Tb butter
- ¼ cup heavy cream, milk, or plant-based milk of your choice
Meanwhile, boil the water, add the pinch of salt and stir in the oats. Reduce the heat to a simmer and cook the oats, stirring often, for about eight minutes. Add the chia seeds, flax seeds and currants, and cook for an additional three minutes. Remove from heat. Stir in the remaining 2 Tb brown sugar, 1 Tb butter, the heavy cream and the apple mixture. Divide into serving bowls and top with almonds. You can customize your own serving with additional cream, butter, fruit, etc.
