Sauteed Kale with Cannellini Beans & Sausage

(serves 6-8)
  • 2 heads of garlic (about 20 cloves), peeled and sliced
  • ¼ cup olive oil
  • 1 lb sausage of your choice (I used an Italian style chicken sausage), sliced
  • 1 red bell pepper, cut into 1-inch strips
  • 6 cups chopped kale
  • 2 16-oz cannellini beans, drained and rinsed
  • Salt and pepper to taste
  • 1 Tb red pepper flakes
  • 1/4 cup balsamic vinegar
  • 3 Tb butter, cut into a couple of pieces

In a large skillet, sauté the garlic in the olive oil over medium heat for about six minutes until it is golden and a little bit crispy. Add the sausage and cook for another four-five minutes until it is golden and cooked through. Add the beans and the red pepper strips and cook, stirring occasionally for about seven minutes. Add the kale and cook, stirring gently, for about two minutes until the kale has wilted. Add the balsamic, red pepper flakes, butter, salt and pepper. Continue to cook, stirring to incorporate, for another two-three minutes. Serve and enjoy!
