Preheat oven to 400F.
Smashed Potatoes
- 12 small (new) potatoes
- olive oil for drizzling
- salt and pepper, paprika, garlic powder to taste
In a saucepan, cover the potatoes with water, bring to a boil, and then reduce the heat to a simmer. Cook for about 15 minutes until the potatoes are done (easily pierced with a fork) and then drain them.
On a baking sheet lined with parchment paper, space the potatoes out and smash each one with a heavy cup or a jar. Drizzle a little olive oil both underneath and on top of each potato, then sprinkle each one with salt, pepper, garlic powder and paprika.
Cook in the oven for about 20-25 minutes, until the potatoes have nice golden crispy edges. Serve alongside your favorite entrée.
