Mix all of the ingredients in a bowl. The fritter batter will be a little loose but will hold together when you cook the patties.
Veggie Wheat Berry Fritters
- 1 cup cabbage, shredded
- 1 carrot, grated
- 1 cup cooked wheat berries (instructions above)
- ¼ cup onion (any kind: red, white, green onions), diced small
- ½ of a bell pepper, diced small
- 1 Tb freshly grated ginger
- 2 Tb soy sauce
- 2 cloves garlic, crushed
- 2 eggs
- 2 Tb cornstarch
- ½ cup flour
- 3 Tb cilantro, chopped
- Canola oil or other vegetable oil for frying
In a skillet, put enough oil in to be ¼-inch deep. Over medium heat, drop about 3 Tb of the fritter batter in for each patty and gently cook until the bottom side is nicely golden, about five minutes. The trick is to cook them slowly without moving them much. Flip the fritters and cook for another five minutes until the second side is also golden. Drain on paper towels to absorb any excess oil and serve.
