Waffles a la Mode with Strawberries & Almonds

(Serves 4)

This “recipe” is a total cheat — I’m trying to incorporate more gluten-free dishes into my life so I used a gluten-free mix (Bob’s Red Mill brand Gluten-Free Pancake Mix), and followed the package directions for waffles and they turned out perfectly, so I would recommend that mix, or you could certainly make your waffle batter from scratch or use another product mix such as Bisquick.

Prepare enough of your favorite waffle batter according to package directions to serve four.

For the waffle toppings:

  • Vanilla ice cream
  • 2 cups sliced strawberries, divided for four servings
  • ½ cup sliced toasted almonds, divided for four servings
  • Maple syrup to taste

Preheat a waffle iron for about five minutes to prep it. If necessary, depending on your waffle iron, brush the waffle grids with a little bit of melted butter or vegetable oil. My iron is nonstick so this step wasn’t needed. Pour enough batter into each waffle section to cover the waffle grid and close the lid. Cook until the steam abates and the waffles are golden brown when you peek at them.

Remove the waffles from the iron and top with a scoop of vanilla ice cream, the strawberries, sliced almonds and maple syrup.
