4 cucumbers, peeled, seeded, and diced
2 cups plain yogurt
1 Tb dried dill or 1/3 cup fresh dill, chopped
Salt and pepper
Grated zest and juice of 1 lemon
In a blender or food processor, blend all of the ingredients until smooth. If you have very nice cucumbers and you like a little texture, you can leave the skins on, which I think is a lovely variation.
Serves 2 as a main course, 4 as a side cup
