Pignoli Cookies

(Makes about 2 dozen)

• 8 oz almond paste
• 1/3 cup granulated sugar
• ¼ cup powdered sugar
• 1 egg
• ½ tsp salt
• ½ tsp almond extract
• ¼ cup almond flour
• ½ cup pinenuts

Preheat oven to 350. Line your baking sheet with parchment paper.

Beat together the almond paste, sugars, egg and salt. Add the almond flour and almond extract and beat for a minute or two until smooth.
Form the dough into tablespoon-sized balls. Put the pinenuts in a bowl and gently roll the top of each ball into them, pressing the nuts into the dough to make them stick.
Place the dough balls on your baking sheet with the nut side up. Bake 10-12 minutes, turning your baking sheet halfway through the bake, until they just start to turn golden.

Remove from oven and place the cookies on a cooling rack.
